|Coconut oil is extracted from the kernel or meat of matured coconut harvested from the coconut palm (Cocos nucifera). Throughout the tropical world it has provided the primary source of fat in the diets of millions of people for generations. It has various applications in food, medicine, and industry. Coconut oil is very heat stable so it makes an excellent cooking and frying oil. It has a smoke point of about 360 °F. Because of its stability it is slow to oxidize and thus resistant to rancidity, lasting up to two years due to high saturated fat content.|

What is Virgin Coconut Oil?
Any coconut oil made from a non-copra style of extraction can be called virgin organic coconut oil. When done properly it doesn't need to be heated or fermented to remove moisture.
DME or Direct Micro Expelled
Silver Oil Mills uses the DME method to produce virgin coconut oil, which is considered to be the best in the industry. DME describes a process in which the oil is extracted directly from the kernel. The coconut kernel is first shredded and dried in an oven to about 10 to 12% moisture. The dried, shredded coconut is then placed into a press and the oil is expelled. The high level of moisture left from the kiln/oven drying process needs to be removed from the oil. If the moisture is not removed it can cause the oil to go rancid extremely fast. Depending on the manufacturer/farmer that is doing the extraction, the oil may be heated or fermented to remove the remaining moisture.
